Deep ruby-purple core leading to a blueish rim, ripe black fruits with plum and peppery spice with hints of liquorice on the nose. The palate is full, round and complex with an elegant tannic structure. The result is an exquisitely elegant wine with structured minerality and a long smooth but grippy finish that is very long. Such is the great fruit and tannin integration, this wine when opened will last for several days. A delicious wine, Demeter Certified.
This wine will pair well with most red and white meats, Cheese or as an aperitif. Or try a dish from the region, Rabbit liver deglazed with raspberry vinegar on a braised rosa lee. Lacquered Duck breast with black olives and fresh pasta. Wild boar pie, if you can find one in a red wine sauce.

Winemaking method: Each grape variety is hand-picked and individually vinified with indigenous yeasts, Minimal sulfur is used which evokes a unique sense of the place.
