Henry McKenna was an Irish immigrant from Ballinascreen/Draperstown in Co Derry who arrived Kentucky, USA in 1839 and established his distillery in the 1850s. He was known for producing sour mash whiskey, which is a process where you use a portion of spent mash from a previous distillation to start the fermentation of new mash (similar to how sourdough bread works). This helps maintain consistency and control the pH.
There are various stories and marketing legends associated with Henry McKenna bourbon, particularly around its quality standards and aging practices.
