Burgundy's sparkling wine is made exactly as Champagne is, with a second fermentation in bottle and at least nine months on the lees. Domaine Bertrand's is pure Chardonnay, the same grape behind Burgundy's great whites.
In the glass it is white gold, with a fine, steady bead. Citrus, white flowers and a mineral edge lead to a palate that manages to be both lively and quite substantial. Serve at 6–8°C and drink within three to five years; it is at its best young and fresh.
