Sparkling red wine is something of a rarity, which makes this Loire Cabernet Franc all the more fun. Alban Foucher of Domaine La Seigneurie harvests by hand in early October, ferments with native yeast and skips the malolactic fermentation to keep the wine fresh. It then has its second fermentation in bottle, as in Champagne, and is finished demi-sec, so lightly sweet.
The colour is a striking ruby, and the fruit runs from strawberry to blackcurrant. Serve well chilled with a chocolate dessert, with a cheeseboard, or as an aperitif that gets people talking.
