Madiran, in the far south-west of France, is Tannat country, and Tannat is not a shy grape. It carries more tannin than almost any other red variety, which is why wines from this appellation have a reputation for needing time and a hearty plate. Les Noyers is Domaine Sergent's more approachable take. It comes from a plot called l'Esquillouté, once planted with walnut trees (hence the name), and is farmed organically.
Expect black fruit with liquorice, cinnamon and a touch of vanilla, and that characteristic firm grip on the finish. It drinks well now, especially with food, and will keep for up to ten years. Serve at about 16°C with slow-cooked dishes, Pyrenees cheeses or a tagine: something with enough substance to meet the tannins halfway.
